- 3 lb russet potatoes, peeled and cut into 1″ pieces
- 2 cups 2% or whole milk
- 1 cup shredded cheddar cheese
- 12 green onions, chopped (green parts only)
- 1 tsp garlic salt (optional)
- 1/4 tsp black pepper
Fill a large pot with water to just cover the potatoes. Bring to a boil, then reduce to a simmer and cook for 15–20 minutes until potatoes are fork-tender.
Remove from heat and drain most of the water, leaving about ½ inch in the pot. Add milk, garlic salt, and pepper, then mash with the back of a fork until the soup reaches your desired texture.
Continue to cook on low heat for 5 minutes, stirring occasionally, to let the flavors blend.
Ladle soup into bowls and top with shredded cheddar cheese and green onions. Season with additional salt and pepper to taste.
