Equipment

  • Air fryer
  • Mixing bowl
  • Whisk
  • Tongs
  • Spatula

Ingredients

  • cup all-purpose flour, spooned and leveled
  • ¼ cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp sea salt
  • ¾ cup water
  • 1 head cauliflower (about 2 lb), broken into large florets
  • Buffalo sauce, for brushing
  • Vegan ranch, for dipping (optional)

Instructions

  • Preheat the air fryer to 400 °F.
  • In a large bowl, whisk together flour, cornstarch, garlic powder, onion powder, paprika, and salt. Add water and whisk until smooth.
  • Add cauliflower florets and stir until evenly coated.
  • Lift each floret from the bowl, letting excess batter drip off. Arrange in a single layer in the air-fryer basket without crowding (work in batches if needed).
  • Air-fry for 9 minutes. Flip each floret and brush with buffalo sauce. Continue air-frying 5–10 minutes more, until crispy and browned at the edges.
  • Remove from the air fryer and brush with additional buffalo sauce. Serve immediately with vegan ranch if desired.

Notes

Work in batches so the florets don’t crowd the basket, which keeps them crunchy. Brush with extra buffalo sauce right before serving and pair with vegan ranch (or your favorite dip) for the full “wing” experience.
