Asian Style Ground Beef Lettuce Wraps

These Asian-style ground beef lettuce wraps are quick, healthy, and big on flavor. Perfect for busy weeknights, they’re made with sautéed beef, crisp veggies, and a homemade garlic-ginger sauce.

Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tsp fresh grated ginger
  • 1 medium red bell pepper, diced
  • 1/2 cup shredded carrots
  • 4 green onions, chopped
  • 1/4 cup maple syrup or brown sugar
  • 1/4 cup soy sauce or coconut aminos
  • 2 tsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1/2 tsp red pepper flakes (optional)
  • 2 tsp arrowroot or cornstarch
  • 1 head Boston Bibb lettuce
  • salt and pepper, to taste
  • sesame seeds, for garnish
  • steamed rice or cauliflower rice, for serving (optional)

Instructions
 

  • In a small bowl, whisk maple syrup, soy sauce, rice vinegar, sesame oil, and red pepper flakes. Add arrowroot and whisk until smooth.
  • Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, about 5 minutes, breaking it into crumbles.
  • Add minced garlic and grated ginger to the beef. Cook 1 minute until fragrant.
  • Stir in diced red bell pepper and shredded carrots. Cook 3–4 minutes until vegetables begin to soften.
  • Pour the prepared sauce into the skillet. Simmer 2–3 minutes, stirring, until thickened. Season with salt and pepper.
  • Stir in chopped green onions. Spoon the beef mixture into lettuce cups, garnish with sesame seeds, and serve with rice if desired.

Notes

Serve in Boston-style lettuce cups and garnish with sesame seeds. Add steamed jasmine rice or cauliflower rice on the side for a heartier meal. Leftovers keep well in an airtight container up to 3 days.
