Ingredients
  

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed vegetables (broccoli, bell peppers, carrots)
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tbsp sriracha
  • 1 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp lime juice

Instructions
 

  • Cook rice according to package instructions. Set aside.
  • Cut chicken into bite-sized pieces and season with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat. Sauté chicken 6–8 minutes until golden and cooked through (165°F).
  • Mix sauce ingredients: mayonnaise, sriracha, honey, garlic powder, lime juice. Adjust spice or sweetness as desired.
  • Add vegetables to skillet with chicken, cook 2–3 minutes until tender-crisp.
  • Pour sauce over chicken and veggies, stir to coat. Serve over rice, garnish with toppings.

Notes

Use cauliflower rice for low-carb. Swap Greek yogurt for mayonnaise for a lighter sauce. Store sauce separately for meal prep.
