Equipment

Ingredients
  

  • 1 cup full-fat cottage cheese
  • 1/4 cup natural peanut butter (no sugar added)
  • 2 tbsp sweetener (maple syrup or sugar-free alternative)
  • 1 tsp vanilla extract
  • 1/4 tsp salt (optional)
  • 1–2 tbsp milk or heavy cream (if needed)
  • 2 oz dark chocolate chips (optional topping)
  • 1 tsp coconut oil (optional topping)
  • chopped peanuts for garnish

Instructions
 

  • Add cottage cheese, peanut butter, sweetener, vanilla, and salt to a blender. Blend until completely smooth.
  • If the mousse is too thick, add 1–2 tablespoons of milk or heavy cream and blend again.
  • Transfer to a bowl and refrigerate for 15–20 minutes to firm up and enhance flavor.
  • Melt chocolate chips and coconut oil together in short microwave bursts until smooth.
  • Divide mousse into serving dishes, drizzle with melted chocolate, and sprinkle with chopped peanuts.

Notes

Use full-fat cottage cheese for the creamiest texture. You can swap peanut butter for almond or cashew butter. Chill before serving for best flavor.
