tomato sauce (passata)

light cream cheese

light sour cream

Instructions
Boil salted water, cook chickpea pasta according to package. Reserve 1–2 cups of pasta water, drain, and set aside.
Heat olive oil in a skillet. Add diced onion and bell pepper, cooking 3–4 minutes until softened.
Add ground beef, cook until browned. Stir in garlic, oregano, paprika, salt, and pepper. Cook 1 minute more.
Stir in tomato paste and tomato sauce. Let it simmer 5 minutes to deepen flavor.
Reduce heat. Stir in light cream cheese and sour cream until smooth.
Add cooked pasta to the skillet, tossing to coat. Use reserved pasta water to thin sauce if needed.
Tear and stir in fresh basil. Adjust seasoning and serve hot.
Notes
Use chickpea or lentil pasta for a boost of fiber and protein. Avoid freezing to keep the sauce texture creamy.
