Ingredients
  

  • 10 oz chickpea flour pasta
  • 1 tbsp olive oil
  • 1 medium onion, finely diced
  • 1 medium green bell pepper, finely diced
  • 1 lb lean ground beef
  • 4 garlic cloves, crushed
  • 1 tbsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsp tomato paste
  • 1 cup tomato sauce (passata)
  • 1/2 cup light cream cheese
  • 1/2 cup light sour cream
  • 6-8 fresh basil leaves

Instructions
 

  • Boil salted water, cook chickpea pasta according to package. Reserve 1–2 cups of pasta water, drain, and set aside.
  • Heat olive oil in a skillet. Add diced onion and bell pepper, cooking 3–4 minutes until softened.
  • Add ground beef, cook until browned. Stir in garlic, oregano, paprika, salt, and pepper. Cook 1 minute more.
  • Stir in tomato paste and tomato sauce. Let it simmer 5 minutes to deepen flavor.
  • Reduce heat. Stir in light cream cheese and sour cream until smooth.
  • Add cooked pasta to the skillet, tossing to coat. Use reserved pasta water to thin sauce if needed.
  • Tear and stir in fresh basil. Adjust seasoning and serve hot.

Notes

Use chickpea or lentil pasta for a boost of fiber and protein. Avoid freezing to keep the sauce texture creamy.
