Ingredients
  

  • 2 large sweet potatoes, peeled and cubed
  • 1 large yellow onion, sliced
  • 3 cloves garlic, chopped
  • 2-3 tbsp extra-virgin olive oil
  • 1-2 tsp seasoning blend of choice
  • 16 oz smoked sausage, cut into 1-inch slices
  • 2 tbsp honey
  • 1 tbsp fresh parsley (optional garnish)

Instructions
 

  • Preheat oven to 400°F. Spread cubed sweet potatoes, onion, and garlic on a rimmed baking sheet. Drizzle with olive oil and seasoning. Toss to coat.
  • Roast for 25–30 minutes, stirring halfway, until potatoes start to brown.
  • Add sliced sausage to the pan. Drizzle honey over sausage and potatoes. Return to oven.
  • Roast an additional 10–12 minutes until sausage is browned and potatoes are tender.
  • Remove from oven and sprinkle with parsley before serving.

Notes

Swap in chicken sausage or turkey sausage for a lighter option. Try taco seasoning, Greek seasoning, or paprika for extra flavor. Leftovers reheat beautifully for breakfast.
